Tips and Tricks on Kasumi Finish Sharpen a Japanese Deba Knife using belts and stones

V2023-008 This video was requested to show how to get an even finish on the bevel of a Japanese Deba Knife for a group member. He is using Shapton stones, which tend to streak because of the stone series "philosophy" which basically does not allow a paste to form from the soft cladding, stone debris, and hard metal. I used a 6x48" Belt sander with a 120 Cubitron belt, and a A45 trizact before u...

Fantastic Video! I have the 2 Micron Diamond emulsion. It is the best I have ever used. Is it a good progression from the Chosera 5k to the 2 Mikron emulsion, or do I have to start with 4 Mikron emulsion after Chosera 5k? Kind regards
I'm very glad youy like the emulsion! It's really up to you how you want tp progress from the 5K Chosera to the 2 micron (8K) emulsion. It is a very natural jump to go directly to the 2 micron, but you you acn also do a progression of 4 micron to 2K micron.
@@JendeIndustries Thank you very much!
By the way, could I make the step from 2 micron emulsion to 0.5 micron without the 1 micron?
This video will allow me to add some nuance to my single bevel sharpenings. Great explanation. Thanks.
Excellent to hear that! One thing I have since come to realize is that the brown stone requires very litle pressure to work better. 😎
@@JendeIndustries Agree. I have a Chosera 800 and a 3000 that get a lot of use in my kitchen. Love that mud. Thanks again.
Excellent explanation. Everything you said makes perfect sense, And it's obvious you're a master and a cut above many of the commercial sharpening shops out there, I especially admire that you tailor the edge geometry to the characteristics of the end user. I can see why the culinary school has chosen you.
Thank you for watching and for the kind words! 😎👍
Is this a steel knife with ceramic coating over the steel, or its a full ceramic knife?
This is blade is completely black ceramic. No coatings at all.
uncle fester 😂funny man - got me with that one lol
Thanks for watching!
The faces on the upper and lower blades are both clean. However, how do I determine when they are sharp enough to cut hair.
Excellent question! Most people generally have a bit of hair from the wife or wherever that can be used to see if the blades cut.
How much does one of these machines cost?
This is a 4x36" belt sander that is usually available for about $100-200 USD depending on the brand.
It's 485 dollars to buy it
Out of focus and terrible lighting. Why even post it?
LOL, I think you are looking at the wrong part. But thanks for taking the time. 🤠
BBW?😂
Belgian Blue Whetstone to be more precise...😎
Yet you keep adding more and more .. and say less is more 🤷
I was a bartender when I was younger - The rule is when you're at the bar, always add more ice. But when you're at home, always add more booze. This is my home 😄😄 But more seriously, I actually don't use a loaded leather strop myself. I always load up my nanocloth, and it takes more, so I add a little too much sometimes on the leather. Ideally you want the thinnest coating possible on cow and roo strops.
What grid u use for clipper sharppening sir ?
With anything mechanical, I tend not to go too refined - usually not over 1K grit. The speed of the machine does the work, and too refined can cause heat buildup and the edges to damage more quickly.
that was awesome
Thank you for watching! Glad you enjoyed it!
Pretty weak drop test.
I disagree, sir. First drop was from chest height, a good amount higher than if it rolled off a table, and landed on both the handle and tip of the steel. It Second was a real drop from the hand as if you dropped it yourself. The impact from both hits would shatter any other ceramic into at least 3 pieces.
I think the concave part of the shear is supposed to use the convex part of sharpener. To prevent widening the ride line?
Thanks for watching! In general, the concave aspect of the ride line needs to be sharpened flatly. Over an extended period of time the contact points between the concave/hollow will widen and ultimately go flat, then convex from abrasion (which is why many people avoid the ride line all together). You are not trying to recreate the hollow grind on the ride line, unless you are actually trying to regrind them to hollow - which is far more advanced than even this. 👍
Omg, thank you! Cheap Amazon clipper, no replacement blades. Good as new blade!
wouldn't going from a straight on stroke to an askew create a double bevel? looks like the askew stoke would cut further back on the shoulder of the bevel flat, aka.make.a wider bevel. But i am only stating my opinion 😊
Excellent question! That depends on the spine situation. On many vintage razors, the spine is warped, uneven, or a combination of something imperfect. Sometimes changing the direction like you mention can create a new angle that might not get the edge of the edge. At the lowest grits, it is often masked when that happens, and It usually shows up more clearly around the 1K-4K grit mark. When that happens, you can keep going in the position that hits the edge rather than changing it up. ☺
@@JendeIndustries Vintage razors are often honed askewed and that over time causes the spine to no get abraded towards tye heel area, because the are honing with extreme heel leading, so that puts a ramp/step within the honing plain of the spine tends to stay thick because it doesn't get abraded like the middle and toe of the spine honing plain.
그 칼 너무좋은데. 구입도 할수 있는지.
Awesome! Might get one soon.
How fine is the grinder ??? P400 or 600, 800, 1000, 2000 ???
Hw much doe's this machine costs.
I appreciate that you started with the production finish on the bevel. Other kasumi videos they already pretty much have the kasumi at the beginning so you can't really see what is going on.
Thank you for watching! Glad you liked it!
I wanted to buy this knife for so long.
Great video, would you also back off a degree or so if you are using nanocloth? From what I have been able to gather the nanocloth stops have less 'give' than leather and I'd assume there would be less need to adjust my angle (guided sharpener).
Thanks for watching! I personally don't change the angle when using the nanocloth strop on a guided system. I just use 3-5 ultra light single sided strokes. If you use more pressure, then maybe consider backing off about 0.5 to 1 degree. Ultimately, you can play with the angles to see which results you like best.
Thanks it was helpful and we'll explain👏👏
Dove si possono comperare
The only reason for the side ratio that I have heard is the wearing down the steel faster
Thanks for watching! The wearing down of the steel is only half the answer, the other half explains that it's because the softer cladding of the laminated steel, or that you will flatten out the hollow. So you can't really win 😁
What is the purpose of dipping the blade tip in what I assume is water?
Thanks for watching! I dipped the blade in water to cool it off. I normally don't need to dip in water, but because I was grinding a decent amount of steel off quickly, it could have easily blued and ruined the temper. Better safe than sorry :)
Dude. you took my dull, tired, poor, my huddled masses of dull blades yearning to breathe free, the wretched refuse abut to be thrown out and made them a new!!! (Some, no replacement blades!) Thank you.!
Thank you for the information but I have a question can you use a diamond sanding block for steel as well as ceramic blades ?
You can using diamonds on everything, but be careful, some of the diamond blocks can be very coarse. Go with a medium or fine and then see if you need to drop down a level.
Danke. Sehr interessant
Thank you for watching!
What do you call the knife?
This is the Yong Shin Custom Forged Taiwan Tuna Knife
Thanks for the clear instructions and showing the whole process. This is probably the most expensive way possible to make a strop, but I bought it because my current strop doesn’t seem to be doing anything at all. I’m not sure if the leather is garbage, if there’s not enough compound, if I didn’t apply it right, or what. Your system eliminates variables and that’s worth it to me. I bought the 4 micron for use on knives-it just arrived today and I followed along to start loading the compound.
Thank you for taking the time to watch and reply! Let us know if you have any questions. Nanocloth works. :)
@@JendeIndustries actually, a follow up question: I’ve done a few rounds of loading the nanocloth and letting it dry, using it a bit, loading a bit more…but how much is “loaded enough?” I have your 270x210 strop, 25ml 4 micron emulsion.
@@joshcarter-com If you've loaded it twice now and it was spread evenly over the surface both times, you should be good to go. The strop will always dry black, and it will look like nothing has been added, but it is there! Make sure your first few strokes are tickling the edge. Most guys coming over from leather are used to putting a lot of force on the strop to make it cut. If you need more pressure, add it little by little.
@@JendeIndustries got it, thanks! I probably have more than enough emulsion on mine. Is there a point where the nanocloth should be reloaded?
@@joshcarter-com reload it with 1 even layer of emulsions when you feel that it isn't working anymore. Depending on your usage, it can be weeks or months before you need to top it off.
Hi. It looks interrsting. Does the emulsion works with a cowhide leather strop or it's necesary a nanocloth to get hair whittling ?
Thanks for watching! The Jende emulsions work on Leather, Roo, nanocloth, balsa, etc. Each medium behaves slightly differently, but you generally start getting hair whittling around 0.5 micron.
how much and do you ship to the UK
Price is US 799 and we do ship to the UK. jendeindustries.com/chef-s-roll-knife-bag.html
Tell me about the silocone spray? Should I oil before reassembly?
Silicone is a lighter lubricant than 3 in 1 oil but I like it primarily because it is greaseless. Oils on the blade lube and protect from rust, but they also tend to act as a sponge for dirt and hair to buildup on. It's not a huge deal as long as the blades are kept lubed regularly. I like to oil before assemble to make sure I get all the parts covered, even if I wipe the excess down before assembly.
Hi, really good explained THX👍🇦🇹
Glad you enjoyed it!
Please help!! I just bought a 6x1 nano strop and 6 micron stroppy stuff diamond emulsion from Gritomatic and I have gotten no results!!! But I think u just answered my problem. I bought the cheapest bottle which was about $17 for a 5ml bottle. First time trying I didn't want to spend 35 $40 to test. I have sprayed almost the entire bottle and the strop is still jet black. The emulsion is green. So if i spend $40 and load the strop how long does that last!? Please sell me on why i would keep buying your strops when i have to spend so much on these expensive diamond emulsions to use? Btw i have been using a regular sharpral leather strop with cheap green compound and get good results so im experienced with how to strop. Please help!
I'm glad some of your questions were answered through this video. Here are the remaining answers to your questions. The nanocloth strop will ALWAYS dry black of light gray. It will not take on the color of the emulsions. Loading the strop 2-3 times initially is usually more than enough to get it going. Then you can use the strop for days, weeks, or even months before reloading it with one layer of emulsion, depending on your stropping frequency. The difference in diamonds vs the compounds is how they work. Compounds polish the surface while diamonds continue to abrade. I'd like to note that you are comparing apples to oranges with materials - Leather is 2 dimensional stropping, while nanocloth is 3 dimensional and you can't apply the wax based compound bars on the nanocloth. There is a learning curve when moving from old school leather with green compound to the nanocloth - mostly the pressure applied because of said abrasion and dimensionality is too great when first coming over from the leather to nanocloth. Also, you may need to address your sharpening progression up to the strops, especially the first time you use them. There's no definitive best strop out there. It's like choosing your favorite carbonated beverage - nanocloth is just another viable option out there to help make your sharpening better, and even a little more fun. Thanks!
Could you please provide the name of the manufacturer of the stones and where is the best online store to purchase them? Thank you for the well done instructional video 🎉
This isn’t how you do it. Clipper blades are not supposed to be flat.
Which stones do you use

It's so cool you can sharpen ceramics with your products. I'm definitely going to place a order
Thank you! Our products definitely work!
I love your wrap -- how did you do that?
The wrap is a bamboo wrap from the factory. :)
No ordinary fellow has professional belt grinders with several grits available. Most broken tips are on knives used by regular fellows and are not shipped for repair by a pro. Think it over.
Thanks for watching. While I try to cater to all levels of sharpeners in my videos, tip repairs like this are just not 101. The information and techniques presented is useful to all, though. As the saying goes, get the right tools for the job if you don't have the belt sander or grinder. Or better yet, don't use the knife as a prybar in the first place 😀
So should you go from the 1500 grit diamond kme stone to 1k grit chosera or skip 1k and go to 2k grit? Seems like backtracking. Or should you go from 600 diamond to the 1000 chosera?
Thanks for watching! Excellent questions. I personally like to do a lateral move from the 1K diamond to 1K stone or 1 step back to 800 or 600 when transitioning from the diamond plates to the Choseras. However, you can move forward from 1500 diamond plate to the 2K stone. It depends more on what kind of edge you want. If you are going for the full mirror, going back a step to remove the deeper diamond scratches is your better move. But f you just want to get a working edge, then go forward. That's all part of the fun of sharpening!😃👍
Finalmente chi sa usare un kamisory per bene ,e Ve signor kamisory

That will work for awhile, losing the hollow grind though, will run hotter too..
Agreed. But it works for the few short term times. Thanks for watching!
